I don't know about you, but as soon as the weather starts to get colder and the leaves start to change, my mind becomes preoccupied by pumpkins. Pumpkin Spice Latte's, Pumpkin Pie, Pumpkin Soup...I could go on :) If you're a pumpkin lover then this recipe for Mason Jar Pumpkin Spice Cupcakes is for you! Not only are they simple & delicious, they're so pretty too!
When I say simple, I mean they can't get any easier. Seriously. The cake has two ingredients. Yup, TWO. All you'll need is a box of Spice Cake Mix (I used Duncan Hines) and a can of Pumpkin Puree. That's it! For the frosting, I made Maple Cream Cheese, yummy! See recipe and directions below.
Mason Jar Pumpkin Spice Cupcakes
To make the cupcakes:
1 Box Spice Cake Mix (Duncan Hines is recommended)
1 15 oz Can Pumpkin Puree (not pumpkin pie filling)
Mix together ingredients and divide into a greased or lined cupcake pan. The mixture will be thick & dense, but these bake surprisingly fluffy. Bake at 350 Degrees F for 20-25 minutes.
To make the Maple Cream Cheese Frosting:
1 package (8 oz) cream cheese, at room temp
1/2 cup butter, at room temp
2 - 4 cups icing sugar
2 tbs pure maple syrup
Pumpkin Pie Spice for garnish
Cream the butter, cream cheese and maple syrup together with an electric mixer. Slowly add the icing sugar and mix until smooth.
*If you're like me, add the 2 cups of icing sugar, combine and taste and add more if necessary :) Same goes for the maple syrup, you can always add more to taste.
To fill the mason jars:
1. Take one cupcake and divide in half. Crumble into the bottom of the mason jar.
2. Fill a piping bag with icing (you don't have to do this, you could use a spoon, but I found it easier and less messy to use a piping bag), and pipe a layer of icing on top of the crumbled cake.
3. Take second half of the cupcake and crumble over top of icing layer.
4. Make a final layer of icing on top of the cumbled cake and garnish with Pumpkin Pie Spice, if desired
5. Decorate your jars with ribbon & a wooden spoon, if so inclined
I'd like to say that I came up with the idea of the two ingredient Pumpkin Cupcakes, but when I Googled it, I realized that I was far from the first person to think of this genius idea. I think you'd be hard pressed to find a creator - just google or search on Pinterest and you'll see a variety of recipes with the same basic formula. You can use the Spice Cake Mix + Pumpkin Puree to make cakes, cookies, whoopie pies, cake pops, whatever - you get the idea. It's easy, it's tasty and if you're craving a little Pumpkin this Fall, definiately worth a try!
